Chinese Chicken
Recipes - Chicken with Asparagus Recipe
Ingredients
45 ml/3 tbsp groundnut (peanut)
oil
5 ml/1 tsp salt
1 clove garlic, crushed
1 spring onion (scallion),
chopped
1 chicken breast, sliced
30 ml/2 tbsp black bean sauce
350 g/12 oz asparagus, cut into
2.5 cm/1/2 in pieces
120 ml/4

oz/1/2 cup chicken stock
5 ml/1 tsp sugar
15 ml/1 tbsp corn-flour
(cornstarch)
45 ml/3 tbsp water
Method:
Heat half the oil and fry the salt, garlic and
spring onion until lightly browned. Add the chicken
and fry until lightly colored.
Add the black bean
sauce and stir to coat the chicken. Add the
asparagus, stock and sugar, bring to the boil, cover
and simmer for 5 minutes until the chicken is
tender.
Mix the corn-flour and water to a paste, stir
it into the pan and simmer, stirring, until the
sauce clears and thickens.
