Chinese Chicken Recipes - Chicken with Bamboo Shoots Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 1 spring onion (scallion), chopped

  • 1 slice ginger root, chopped

  • 225 g/8oz chicken breast, cut into slivers

  • 225 g/8oz bamboo shoots, cut into slivers

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the garlic, spring onion and ginger until lightly browned.

  2. Add the chicken and stir-fry for 5 minutes. Add the bamboo shoots and stir-fry for 2 minutes.

  3. Stir in the soy sauce, wine or sherry and corn-flour and stir-fry for about 3 minutes until the chicken is cooked through.
