Chinese Chicken Recipes - Chicken with Black Bean Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 30 ml/2 tbsp black bean sauce

  • 2 cloves garlic, crushed

  • 450 g/1lb chicken, diced

  • 250 ml/8 fl oz/1 cup stock

  • 1 green pepper, diced

  • 1 onion, chopped

  • 15 ml/1 tbsp soy sauce

  • freshly ground pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Heat the oil and fry the salt, black beans and garlic for 30 seconds. Add the chicken and fry until lightly browned.

  2. Stir in the stock, bring to the boil, cover and simmer for 10 minutes. Add the pepper, onion, soy sauce and pepper, cover and simmer for a further 10 minutes.

  3. Blend the corn-flour and water to a paste, stir into the sauce and simmer, stirring, until the sauce thickens and the chicken is tender.
