Chinese Chicken
Recipes - Chicken with Broccoli Recipe
Ingredients
450 g/1lb chicken meat, diced
225 g/8 oz chicken livers
45 ml/3 tbsp plain
(all-purpose) flour
45 ml/3 tbsp groundnut (peanut)
oil
1 onion, diced
1 red pepper, diced
1 green pepper, diced
225 g/8 oz broccoli florets
4 slices pineapple, diced
30 ml/2 tbsp tomato puree
(paste)
30 ml/2 tbsp hoisin sauce
30 ml/2 tbsp honey
30 ml/2 tbsp soy sauce
300 ml/1 1/4 cups chicken
stock
10 ml/2 tsp sesame oil
Method:
Toss the chicken and chicken livers in the flour.
Heat the oil and stir-fry the liver for 5 minutes
then remove from the pan.
Add the chicken, cover and
fry over a moderate heat for 15 minutes, stirring
occasionally. Add the vegetables and pineapple and
stir-fry for 8 minutes.
Return the livers to the
wok, add the remaining ingredients and bring to the
boil. Simmer, stirring, until the sauce thickens.
