Chinese Chicken Recipes - Chicken with Broccoli Recipe

Ingredients

  • 450 g/1lb chicken meat, diced

  • 225 g/8 oz chicken livers

  • 45 ml/3 tbsp plain (all-purpose) flour

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, diced

  • 1 red pepper, diced

  • 1 green pepper, diced

  • 225 g/8 oz broccoli florets

  • 4 slices pineapple, diced

  • 30 ml/2 tbsp tomato puree (paste)

  • 30 ml/2 tbsp hoisin sauce

  • 30 ml/2 tbsp honey

  • 30 ml/2 tbsp soy sauce

  • 300 ml/1 1/4 cups chicken stock

  • 10 ml/2 tsp sesame oil


Method:

  1. Toss the chicken and chicken livers in the flour. Heat the oil and stir-fry the liver for 5 minutes then remove from the pan.

  2. Add the chicken, cover and fry over a moderate heat for 15 minutes, stirring occasionally. Add the vegetables and pineapple and stir-fry for 8 minutes.

  3. Return the livers to the wok, add the remaining ingredients and bring to the boil. Simmer, stirring, until the sauce thickens.
