Ingredients
45 ml/3 tbsp groundnut (peanut)
oil
30 ml/2 tbsp peanuts
450 g/1 lb chicken, diced
1/2 cabbage, cut into squares
15 ml/1 tbsp black bean sauce :
red chili peppers, minced
5 ml/1 tsp salt
Method:
Heat a little oil and fry the peanuts for a few
minutes, stirring continuously. Remove, drain then
crush.
Heat the remaining oil and fry the chicken
and cabbage until lightly browned. Remove from the
pan. Add the black bean sauce and chili peppers and
stir-fry for 2 minutes.
Return the chicken and
cabbage to the pan with the crushed peanuts and
season with salt. Stir-fry until heated through then
serve at once.
