Chinese Chicken Recipes - Chicken with Chestnuts Recipe

Ingredients

  • 225 g/8oz chicken, sliced

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp soy sauce

  • oil for deep-frying

  • 250 ml/8 fl /1 cup chicken stock

  • 200 g/7oz water chestnuts, chopped

  • 225 g/8oz chestnuts, chopped

  • 225 g/8 oz mushrooms, quartered

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Sprinkle the chicken with salt and soy sauce and rub it well into the chicken. Heat the oil and deep-fry the chicken until golden brown then remove and drain.

  2. Place the chicken in a pan with the stock, bring to the boil and simmer for 5 minutes.

  3. Add the water chestnuts, chestnuts and mushrooms, cover and simmer for about 20 minutes until everything is tender. Serve garnished with parsley.
