Chinese Chicken
Recipes - Chicken with Chestnuts Recipe
Ingredients
225 g/8oz chicken, sliced
5 ml/1 tsp salt
15 ml/1 tbsp soy sauce
oil for deep-frying
250 ml/8 fl /1 cup chicken
stock
200 g/7oz water chestnuts,
chopped
225 g/8oz chestnuts, chopped
225 g/8 oz mushrooms, quartered
15 ml/1 tbsp chopped fresh
parsley
Method:
Sprinkle the chicken with salt and soy sauce and rub
it well into the chicken. Heat the oil and deep-fry
the chicken until golden brown then remove and
drain.
Place the chicken in a pan with the stock,
bring to the boil and simmer for 5 minutes.
Add the
water chestnuts, chestnuts and mushrooms, cover and
simmer for about 20 minutes until everything is
tender. Serve garnished with parsley.
