Chinese Chicken Recipes - Chicken Chop Suey Recipe

Ingredients

  • 100 g/4 oz Chinese leaves, shredded

  • 100 g/4 oz bamboo shoots, cut into strips

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 3 spring onions (scallions), sliced

  • 2 cloves garlic, crushed

  • 1 slice ginger root, chopped

  • 225 g/8 oz chicken breast, cut into strips

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp sugar

  • freshly ground pepper

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Blanch the Chinese leaves and bamboo shoots in boiling water for 2 minutes. Drain and pat dry.

  2. Heat 45ml/3 tbsp of oil and fry the onions, garlic and ginger until lightly browned. Add the chicken and stir-fry for 4 minutes. Remove from the pan.

  3. Heat the remaining oil and stir-fry the vegetables for 3 minutes. Add the chicken, soy sauce, wine or sherry, salt, sugar and a pinch of pepper and stir-fry for 1 minute.

  4. Mix the corn-flour with a little water, stir it into the sauce and simmer, stirring, until the sauce clears and thickens.
