Chinese Chicken
Recipes - Chicken Chop Suey Recipe
Ingredients
-
100 g/4 oz Chinese leaves,
shredded
-
100 g/4 oz bamboo shoots, cut into
strips
-
60 ml/4 tbsp groundnut
(peanut) oil
-
3 spring onions
(scallions), sliced
-
2 cloves garlic, crushed
-
1 slice ginger root,
chopped
-
225 g/8 oz chicken breast,
cut into strips
-
45 ml/3 tbsp soy sauce
-
15 ml/1 tbsp rice wine or
dry sherry
-
5 ml/1 tsp salt
-
2.5 ml/1/2 tsp sugar
-
freshly ground pepper
-
15 ml/1 tbsp corn-flour
(cornstarch)
Method:
-
Blanch the Chinese leaves and bamboo shoots in
boiling water for 2 minutes. Drain and pat dry.

Heat
45ml/3 tbsp of oil and fry the onions, garlic and
ginger until lightly browned. Add the chicken and
stir-fry for 4 minutes. Remove from the pan.

Heat
the remaining oil and stir-fry the vegetables for 3
minutes. Add the chicken, soy sauce, wine or sherry,
salt, sugar and a pinch of pepper and stir-fry for 1
minute.

Mix the corn-flour with a little water, stir
it into the sauce and simmer, stirring, until the
sauce clears and thickens.
