Chinese Chicken Recipes - Chicken Chow Mien Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 450 g/1lb chicken, sliced

  • 225 g/8 oz bamboo shoots, sliced

  • 100 g/4 oz celery, sliced

  • 225 g/8 oz mushrooms. sliced

  • 450 ml/2 cups chicken stock

  • 225 g/8 oz bean sprouts

  • 4 onions, cut into wedges

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 225 g/8 oz dried Chinese noodles


Method:

  1. Heat the oil with the garlic until lightly golden then add the chicken and stir-fry for 2 minutes until lightly browned.

  2. Add the bamboo shoots, celery and mushrooms and stir-fry for 3 minutes. Add most of the stock, bring to the boil, cover and simmer for 8 minutes.

  3. Add the bean sprouts and onions and simmer for 2 minutes, stirring, until there is just a little stock remaining.

  4. Mix together the remaining stock with the soy sauce and corn-flour. Stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  5. Meanwhile, cook the noodles in boiling salted water for a few minutes, according to the instructions on the packet.

  6. Drain well then toss with the chicken mixture and serve at once.
