Chinese Chicken
Recipes - Chicken Chow Mien Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil
-
2 cloves garlic, crushed
-
450 g/1lb chicken, sliced
-
225 g/8 oz bamboo shoots,
sliced
-
100 g/4 oz celery, sliced
-
225 g/8 oz mushrooms.
sliced
-
450 ml/2 cups chicken
stock
-
225 g/8 oz bean sprouts
-
4 onions, cut into wedges
-
30 ml/2 tbsp soy sauce
-
30 ml/2 tbsp corn-flour
(cornstarch)
-
225 g/8 oz dried Chinese
noodles
Method:

Heat the oil with the garlic until lightly golden
then add the chicken and stir-fry for 2 minutes
until lightly browned.

Add the bamboo shoots, celery
and mushrooms and stir-fry for 3 minutes. Add most
of the stock, bring to the boil, cover and simmer
for 8 minutes.

Add the bean sprouts and onions and
simmer for 2 minutes, stirring, until there is just
a little stock remaining.

Mix together the
remaining stock with the soy sauce and corn-flour.
Stir it into the pan and simmer, stirring, until the
sauce clears and thickens.

Meanwhile, cook the noodles in boiling salted water
for a few minutes, according to the instructions on
the packet.

Drain well then toss with the chicken
mixture and serve at once.
