Chinese Chicken Recipes - Chicken Foo Yung Recipe

Ingredients

  • 6 eggs, beaten

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • 100 g/4 oz mushrooms, roughly    chopped

  • 225 g/8 oz chicken breast, diced

  • 1 onion, finely chopped

  • 5 ml/1 tsp salt

  • 45 ml/3 tbsp groundnut (peanut) oil


Method:

  1. Beat the eggs then beat in the corn-flour. Stir in all the remaining ingredients except the oil.

  2. Heat the oil. Pour the mixture into the pan a little at a time to make small pan­cakes about 7.5 cm/3 in across.

  3. Cook until the bottom is golden brown then turn and cook the other side.
