Chinese Chicken Recipes - Chicken with Green Beans Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 450 g/1 lb cooked chicken. shredded

  • 5 ml/1 tsp salt

  • 2.5 ml/1/2 tsp freshly ground pepper

  • 225 g/8 oz green beans. cut into pieces

  • 1 stalk celery, diagonally sliced

  • 225 g/8 oz mushrooms. sliced

  • 250 ml/8 fl oz/1 cup chicken stock

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water

  • 10 ml/2 tsp soy sauce


Method:

  1. Heat the oil and fry the chicken, salt and pepper until lightly browned.

  2. Add the beans, celery and mushrooms and mix well. Add the stock, bring to  the boil, cover and simmer for 15 minutes.

  3. Mix the corn-flour, water and soy sauce to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
