Chinese Chicken
Recipes - Chicken with Hoisin Sauce Recipe
Ingredients

4 chicken portions, halved
-
50 g/2 oz/1/2 cup corn-flour
(cornstarch)
-
oil for deep-frying
-
10 ml/2 tsp grated ginger
root
-
2 onions, chopped
-
225 g/8 oz broccoli florets
-
1 red pepper, chopped
-
225 g/8 oz button mushrooms
-
250 ml/8 fl oz/1 cup
chicken stock
-
45 ml/3 tbsp rice wine or
dry sherry
-
45 ml/3 tbsp cider vinegar
-
45 ml/3 tbsp hoisin sauce
-
20 ml/4 tsp soy sauce
Method:
-
Coat the chicken pieces in half the corn-flour. Heat
the oil and fry the chicken pieces a few at a time
for about 8 minutes until golden brown and cooked
through.

Remove from the pan and drain on kitchen
paper. Remove all but 30 ml/2 tbsp of oil from the
pan and stir-fry the ginger for 1 minute.

Add the
onions and stir-fry for 1 minute. Add the broccoli,
pepper and mushrooms and stir-fry for 2 minutes.
Combine the stock with the reserved corn-flour and
remaining ingredients and add to the pan.

Bring to
the boil, stirring, and cook until the sauce clears.
Return the chicken to the wok and cook, stirring,
for about 3 minutes until heated through.
