Chinese Chicken
Recipes - Chicken with Leeks Recipe
Ingredients
30 ml/2 tbsp groundnut
(peanut) oil
5 ml/1 tsp salt
225 g/8 oz leeks, sliced
1 slice ginger root,
chopped
225 g/8 oz chicken, thinly
sliced
15 ml/1 tbsp rice wine or
dry sherry
15 ml/1 sauce
Method:
Heat half the oil and fry the salt and leeks until
lightly browned then remove them from the pan. Heat
the remaining oil and fry the ginger and chicken
until lightly browned.
Add the wine or sherry and
soy sauce and fry for a further 2 minutes until the
chicken is cooked.
Return the leeks to the pan and
stir together until heated through. Serve at once.
