Chinese Chicken Recipes - Chicken Livers with Bamboo
Shoots Recipe
Ingredients

225 g/8 oz chicken livers,
thickly sliced

45 ml/3 tbsp rice wine or
dry sherry

45 ml/3 tbsp groundnut (peanut) oil

15 ml/1 tbsp soy sauce

100 g/4 oz bamboo shoots,
sliced

100 g/4 oz water chestnuts, sliced

ml/4 tbsp chicken stock

salt and freshly ground
pepper
Method:

Mix the chicken livers with the wine or sherry and
leave to stand for 30 minutes. Heat the oil and fry
the chicken livers until lightly browned.

Add the
marinade, soy sauce, bamboo shoots, water chestnuts
and stock.

Bring to the boil and season with salt
and pepper. Cover and simmer for about 10 minutes
until tender.
