Chinese Chicken Recipes - Chicken Livers with Bamboo Shoots Recipe

Ingredients

  • 225 g/8 oz chicken livers, thickly sliced

  • 45 ml/3 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 15 ml/1 tbsp soy sauce

  • 100 g/4 oz bamboo shoots, sliced

  • 100 g/4 oz water chestnuts, sliced

  • 60 ml/4 tbsp chicken stock

  • salt and freshly ground pepper


Method:

  1. Mix the chicken livers with the wine or sherry and leave to stand for 30 minutes. Heat the oil and fry the chicken livers until lightly browned.

  2. Add the marinade, soy sauce, bamboo shoots, water chestnuts and stock.

  3. Bring to the boil and season with salt and pepper. Cover and simmer for about 10 minutes until tender.
