Chinese Chicken Recipes - Chicken Livers with Mange tout Recipe
Ingredients
225 g/8 oz chicken livers,
thickly sliced
10 ml/2 tsp corn-flour
(cornstarch)
10 ml/2 tsp rice wine or
dry sherry
15 ml/1 tbsp soy sauce
45 ml/3 tbsp groundnut
(peanut) oil
2.5 ml/1/2 tsp salt
2 slices ginger root,
minced
100 g/4 oz mange tout (snow
peas)
10 ml/2 tsp corn-flour
(cornstarch)
60 ml/4 tbsp water
Method:
Place the chicken livers in a bowl. Add the
corn-flour, wine or sherry and soy sauce and toss
well to coat.
Heat half the oil and fry the salt and
ginger until lightly browned. Add the mange tout and
stir-fry until well coated with oil then remove from
the pan.
Heat the remaining oil and fry the chicken
livers for 5 minutes until cooked through.
Mix the corn-flour and water to a paste, stir it into the pan
and simmer, stirring, until the sauce clears and
thickens.
Return the mange tout to the pan and
simmer until heated through.
