Chinese Chicken Recipes - Chicken Livers with Mange tout Recipe

Ingredients

  • 225 g/8 oz chicken livers, thickly sliced

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 10 ml/2 tsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 slices ginger root, minced

  • 100 g/4 oz mange tout (snow peas)

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water


Method:

  1. Place the chicken livers in a bowl. Add the corn-flour, wine or sherry and soy sauce and toss well to coat.

  2. Heat half the oil and fry the salt and ginger until lightly browned. Add the mange tout and stir-fry until well coated with oil then remove from the pan.

  3. Heat the remaining oil and fry the chicken livers for 5 minutes until cooked through.

  4. Mix the corn-flour and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  5. Return the mange tout to the pan and simmer until heated through.
