Chinese Chicken Recipes - Chicken Livers with Noodle Pancake Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 onion, sliced

  • 450 g/1b chicken livers, halved

  • 2 stalks celery, sliced

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 30 ml/2 tbsp water

  • noodle pancake


Method:

  1. Heat the oil and fry the onion until softened. Add the chicken livers and stir-fry until colored. Add the celery and stir-fry for 1 minute.

  2. Add the stock, bring to the boil, cover and simmer for 5 minutes. Mix the corn-flour, soy sauce and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  3. Pour the mixture over the noodle pancake and serve.
