Chinese Chicken Recipes - Chicken Livers with Oyster Sauce Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, chopped

  • 225 g/8 oz chicken livers, halved

  • 100 g/4 oz mushrooms, sliced

  • 30 ml/2 tbsp oyster sauce

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 5 ml/1 tsp sugar

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Heat half the oil and fry the onion until softened. Add the chicken livers and fry until just colored. Add the mushrooms and fry for 2 minutes.

  2. Mix the oyster sauce, soy sauce, wine or sherry, stock and sugar, pour it into the pan and bring to the boil, stirring.

  3. Mix the corn-flour and water to a paste, add it to the pan and simmer, stirring until the sauce clears and thickens and the livers are tender.
