Chinese Chicken Recipes - Chicken Livers with Pineapple Recipe

Ingredients

  • 225 g/8 oz chicken livers, halved

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp sugar

  • 15 ml/1 tbsp wine vinegar

  • salt and freshly ground pepper

  • 100 g/4 oz pineapple chunks

  • 60 ml/4 tbsp chicken stock


Method:

  1. Blanch the chicken livers in boiling water for 30 seconds then drain. Heat the oil and stir-fry the chicken livers for 30 seconds.

  2. Mix together the soy sauce, corn-flour, sugar, wine vinegar, salt and pepper, pour into the pan and stir well to coat the chicken livers.

  3. Add the pineapple chunks and stock and stir-fry for about 3 minutes until the livers are cooked.
