Chinese Chicken Recipes - Chicken with Lychees Sauce Recipe
Ingredients

225 g/8 oz chicken
-
1 spring onion (scallion)
-
4 water chestnuts
-
30 ml/2 tbsp corn-flour
(cornstarch)
-
45 ml/3 tbsp soy sauce
-
30 ml/2 tbsp rice wine or
dry sherry
-
2 egg whites
-
oil for deep-frying
-
400 g/14 oz canned lychees
in syrup

5 tbsp chicken stock
Method:

Mince (grind) the chicken with the spring onion and
water chestnut. Mix in half the corn-flour, 30 ml/2
tbsp of soy sauce, the wine or sherry and the egg
whites.

Shape the mixture into walnut-sized balls.
Heat the oil and deep-fry the chicken until golden
brown. Drain on kitchen paper.

Meanwhile, heat the lychee syrup gently with the
stock and reserved soy sauce.

Mix the remaining corn-flour with a little water, stir it into the pan
and simmer, stirring, until the sauce clears and
thickens.

Stir in the lychees and simmer gently to
heat through. Arrange the chicken on a warmed
serving plate, pour over the lychees and sauce and
serve at once.
