Chinese Chicken Recipes - Chicken with Lychees Sauce Recipe

Ingredients

  • 225 g/8 oz chicken

  • 1 spring onion (scallion)

  • 4 water chestnuts

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 2 egg whites

  • oil for deep-frying

  • 400 g/14 oz canned lychees in syrup

  • 5 tbsp chicken stock


Method:

  1. Mince (grind) the chicken with the spring onion and water chestnut. Mix in half the corn-flour, 30 ml/2 tbsp of soy sauce, the wine or sherry and the egg whites.

  2. Shape the mixture into walnut-sized balls. Heat the oil and deep-fry the chicken until golden brown. Drain on kitchen paper.

  3. Meanwhile, heat the lychee syrup gently with the stock and reserved soy sauce.

  4. Mix the remaining corn-flour with a little water, stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  5. Stir in the lychees and simmer gently to heat through. Arrange the chicken on a warmed serving plate, pour over the lychees and sauce and serve at once.
