Chinese Chicken Recipes - Chicken with Lychees Recipe

Ingredients

  • 3 chicken breasts

  • 60 ml/4 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 5 spring onions (scallions), sliced

  • 1 red pepper, cut into chunks

  • 120 ml/4 fl oz/1/2 cup tomato sauce

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 5 ml/1 tsp sugar

  • 275 g/10 oz peeled lychees


Method:

  1. Cut the chicken breasts in half and remove and discard the bones and skin. Cut each breast into 6.

  2. Reserve 5 ml/1 tsp of corn-flour and toss the chicken in the remainder until it is well coated.

  3. Heat the oil and stir-fry the chicken for about 8 minutes until golden brown. Add the spring onions and pepper and stir-fry for 1 minute.

  4. Mix together the tomato sauce, half the stock and the sugar and stir it into the wok with the lychees.

  5. Bring to the boil, cover and simmer for about 10 minutes until the chicken is cooked through.

  6. Mix the reserved corn-flour and stock then stir it into the pan. Simmer, stirring, until the sauce clears and thickens.
