Chinese Chicken Recipes - Chicken with Mange tout Recipe

Ingredients

  • 225g/8oz chicken, thinly sliced

  • 5 ml/1 tsp corn-flour (cornstarch)

  • 5 ml/1 tsp rice wine or dry sherry

  • 5 ml/1 tsp sesame oil

  • 1 egg white, lightly beaten

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 1 slice ginger root, minced

  • 100 g/4 oz mange tout (snow peas)

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • salt and freshly ground pepper


Method:

  1. Mix the chicken with the corn-flour, wine or sherry, sesame oil and egg white. Heat half the oil and fry the garlic and ginger until lightly browned.

  2. Add the chicken and fry until golden then remove from the pan. Heat the remaining oil and fry the mange tout for 2 minutes.

  3. Add the stock, bring to the boil, cover and simmer for 2 minutes. Return the chicken to the pan and season with salt and pepper. Simmer gently until heated through.
