Chinese Chicken Recipes - Chicken with Mangoes Recipe

Ingredients

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • 250 ml/8 fl oz/1 cup water

  • 2.5 ml/1/2 tsp salt

  • pinch of baking powder

  • 3 chicken breasts

  • oil for deep-frying

  • 1 slice ginger root, minced

  • 150 ml/2/3 cup chicken stock

  • 45 ml/3 tbsp wine vinegar

  • 45 ml/3 tbsp rice wine or dry sherry

  • 20 ml/4 tsp soy sauce

  • 10 ml/2 tsp sugar

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 5 ml/1 tsp sesame oil

  • 5 spring onions (scallions), sliced

  • 400 g/11 oz canned mangoes, drained and cut into strips


Method:

  1. Whisk together the flour, water, salt and baking powder. Leave to stand for 15 minutes. Remove and discard the skin and bones from the chicken.

  2. Cut the chicken into thin strips. Mix these into the flour mixture. Heat the oil and fry the chicken for about 5 minutes until golden brown.

  3. Remove from the pan and drain on kitchen paper. Remove all but 15 ml/1 tbsp of oil from the wok and stir-fry the ginger until lightly browned.

  4. Mix the stock with the wine vinegar, wine or sherry, soy sauce, sugar, corn-flour and sesame oil. Add to the pan and bring to the boil, stirring.

  5. Add the spring onions and simmer for 3 minutes. Add the chicken and mangoes and simmer, stirring, for 2 minutes.
