Chinese Chicken Recipes - Chicken with Mushrooms and Peanuts Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 1 slice ginger root, minced

  • 450 g/1lb boned chicken, cubed

  • 225 g/8 oz button mushrooms

  • 100 g/4 oz bamboo shoots, cut into strips

  • 1 green pepper, cubed

  • 1 red pepper, cubed

  • 250 ml/8 fl oz/1 cup chicken stock

  • 30 ml/2 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 15ml/1 tbsp Tabasco sauce

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp water


Method:

  1. Heat the oil, garlic and ginger until the garlic is lightly golden. Add the chicken and stir-fry until it is lightly browned.

  2. Add the mushrooms, bamboo shoots and peppers and stir-fry for 3 minutes. Add the stock, wine or sherry, soy sauce and Tabasco sauce and bring to the boil, stirring.

  3. Cover and simmer for about 10 minutes until the chicken is thoroughly cooked. Mix together the corn-flour and water and stir them into the sauce.

  4. Simmer, stirring, until the sauce clears and thickens, adding a little more stock or water if the sauce is too thick.
