Chinese Chicken Recipes - Chicken and Mushrooms Stir-Fry Recipe
Ingredients

45 ml/3 tbsp groundnut
(peanut) oil

1 clove garlic, crushed
-
1 spring onion (scallion),
chopped
-
1 slice ginger root, minced
-
225 g/8 oz chicken breast,
cut into slivers
-
225 g/8 oz button mushrooms
-
45 ml/3 tbsp soy sauce
-
15 ml/1 tbsp rice wine or
dry sherry
-
5 ml/1 tsp corn-flour
(cornstarch)
Method:
-
Heat the oil and fry the garlic, spring onion and
ginger until lightly browned.

Add the chicken and stir-fry for 5 minutes. Add the mushrooms and
stir-fry for 3 minutes.

Add the soy sauce, wine or
sherry and corn-flour and stir-fry for about 5
minutes until the chicken is cooked through.
