Chinese Chicken Recipes - Chicken with Onions Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2 onions, chopped

  • 450 g/1lb chicken, sliced

  • 30 ml/2 tbsp rice wine or dry sherry

  • 250 ml/8 fl oz/1 cup chicken stock

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Heat the oil and fry the onions until lightly browned. Add the chicken and fry until lightly browned.

  2. Add the wine or sherry, stock and soy sauce, bring to the boil, cover and simmer for 25 minutes until the chicken is tender.

  3. Blend the corn-flour and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
