Chinese Chicken Recipes - Chicken with Peanuts Recipe

Ingredients

  • 225 g/8 oz chicken, thinly sliced

  • 1 egg white, lightly beaten

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 45 mll3 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 1 slice ginger root, minced

  • 2 leeks, chopped

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 100 g/4 oz/ roasted peanuts


Method:

  1. Mix the chicken with the egg white and corn-flour until well coated. Heat half the oil and stir-fry the chicken until golden brown then remove from the pan.

  2. Heat the remaining oil and fry and garlic and ginger until softened. Add the leeks and fry until lightly browned.

  3. Stir in the soy sauce and wine or sherry and simmer for 3 minutes. Return the chicken to the pan with the peanuts and simmer gently until heated through.
