Chinese Chicken Recipes - Chicken with Peas Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 1 onion, chopped

  • 450 g/1lb chicken, diced

  • salt and freshly ground pepper

  • 100 g/4 oz peas

  • 2 stalks celery, chopped

  • 100 g/4 oz mushrooms, chopped

  • 250 ml/1 cup chicken stock

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 60 ml/4 tbsp water


Method:

  1. Heat the oil and fry the onion until lightly browned. Add the chicken and fry until colored.

  2. Season with salt and pepper and add the peas, celery and mushrooms and stir well. Add the stock, bring to the boil, cover and simmer for 15 minutes.

  3. Blend the corn-flour, soy sauce and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
