Chinese Chicken Recipes - Chicken with Peppers and Tomatoes Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 450 g/1lb cooked chicken, sliced

  • 10 ml/2 tsp salt

  • 5 ml/1 tsp freshly ground pepper

  • 1 green pepper, cut into chunks

  • 4 large tomatoes, skinned and cut into wedges

  • 250 ml/1 cup chicken stock

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 120 ml/4 fl oz/1/2 cup water


Method:

  1. Heat the oil and fry the chicken, salt and pepper until browned. Add the peppers and tomatoes.

  2. Pour in the stock, bring to the boil, cover and simmer for 15 minutes.

  3. Blend the corn-flour, soy sauce and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
