Chinese Chicken Recipes - Chicken with Peppers Recipe
Ingredients
60 ml/4 tbsp soy sauce
45 ml/3 tbsp rice wine or
dry sherry
45 ml/3 tbsp corn-flour (cornstarch)
450 g/1lb chicken, minced (ground)
60 ml/4 tbsp
groundnut (peanut) oil
2.5 ml/1/2 tsp salt
2 cloves garlic, crushed
2 red peppers, cubed
1 green pepper, cubed
5 ml/1 tsp sugar
300 ml/1 1/4 cups
chicken stock
Method:
Mix together half the soy sauce, half the wine or
sherry and half the corn-flour. Pour over the
chicken, stir well, and leave to marinate for at
least 1 hour.
Heat half the oil with the salt and
garlic until the garlic is lightly browned. Add the
chicken and marinade and stir-fry for about 4
minutes until the chicken turns white then remove
from the pan.
Add the remaining oil to the pan and
stir-fry the peppers for 2 minutes. Add the sugar to
the pan with the remaining soy sauce, wine or sherry
and corn-flour and mix well.
Add the stock, bring to
the boil then simmer, stirring, until the sauce
thickens. Return the chicken to the pan, cover and
simmer for 4 minutes until the chicken is cooked
through.
