Chinese Chicken Recipes - Chicken with Peppers Recipe

Ingredients

  • 60 ml/4 tbsp soy sauce

  • 45 ml/3 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • 450 g/1lb chicken, minced (ground)

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 cloves garlic, crushed

  • 2 red peppers, cubed

  • 1 green pepper, cubed

  • 5 ml/1 tsp sugar

  • 300 ml/1 1/4 cups chicken stock


Method:

  1. Mix together half the soy sauce, half the wine or sherry and half the corn-flour. Pour over the chicken, stir well, and leave to marinate for at least 1 hour.

  2. Heat half the oil with the salt and garlic until the garlic is lightly browned. Add the chicken and marinade and stir-fry for about 4 minutes until the chicken turns white then remove from the pan.

  3. Add the remaining oil to the pan and stir-fry the peppers for 2 minutes. Add the sugar to the pan with the remaining soy sauce, wine or sherry and corn-flour and mix well.

  4. Add the stock, bring to the boil then simmer, stirring, until the sauce thickens. Return the chicken to the pan, cover and simmer for 4 minutes until the chicken is cooked through.
