Chinese Chicken Recipes - Chicken with Pineapple and Lychees Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 225 g/8 oz chicken, thinly sliced

  • 1 slice ginger root, minced

  • 15 ml/1 tsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 200 g/7 oz canned pineapple chunks in syrup

  • 200 g/7 oz canned lychees in syrup

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the chicken until lightly colored. Add the soy sauce and wine or sherry and stir well.

  2. Measure 250 ml/8fl oz/1 cup of the mixed pineapple and lychee syrup and reserve 30ml/2 tbsp.

  3. Add the rest to the pan, bring to the boil and simmer for a few minutes until the chicken is tender. Add the pineapple chunks and lychees.

  4. Mix the corn-flour with the reserved syrup, stir into the pan and simmer, stirring, until the sauce clears and thickens.
