Chinese Chicken Recipes - Chicken and Pineapple Recipe
Ingredients
30 ml/2 tbsp groundnut
(peanut) oil
5 ml/1 tsp salt
2 cloves garlic, crushed
450 g/1 lb boned chicken,
thinly sliced
2 onions, sliced
100 g/4 oz water chestnuts,
sliced
100 g/4 oz pineapple chunks
30 ml/2 tbsp rice wine or
dry sherry
450 ml/2 cups chicken
stock
5 ml/1 tsp sugar
freshly ground pepper
30 ml/2 tbsp pineapple juice
30 ml/2 tbsp soy sauce
30 ml/2 tbsp corn-flour
(cornstarch)
Method:
Heat the oil, salt and garlic until the garlic turns
light golden. Add the chicken and stir-fry for 2
minutes.
Add the onions, water chestnuts and
pineapple and stir-fry for 2 minutes. Add the wine
or sherry, stock and sugar and season with pepper.
Bring to the boil, cover and simmer for 5 minutes.
Mix together the pineapple juice, soy sauce and corn-flour. Stir into the pan and simmer, stirring
until the sauce thickens and clears.
