Chinese Chicken Recipes - Chicken and Pineapple Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 2 cloves garlic, crushed

  • 450 g/1 lb boned chicken, thinly sliced

  • 2 onions, sliced

  • 100 g/4 oz water chestnuts, sliced

  • 100 g/4 oz pineapple chunks

  • 30 ml/2 tbsp rice wine or dry sherry

  • 450 ml/2 cups chicken stock

  • 5 ml/1 tsp sugar

  • freshly ground pepper

  • 30 ml/2 tbsp pineapple juice

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp corn-flour (cornstarch)


Method:

  1. Heat the oil, salt and garlic until the garlic turns light golden. Add the chicken and stir-fry for 2 minutes.

  2. Add the onions, water chestnuts and pineapple and stir-fry for 2 minutes. Add the wine or sherry, stock and sugar and season with pepper.

  3. Bring to the boil, cover and simmer for 5 minutes. Mix together the pineapple juice, soy sauce and corn-flour. Stir into the pan and simmer, stirring until the sauce thickens and clears.
