Chinese Chicken Recipes - Chicken with Pork Recipe

Ingredients

  • 1 chicken breast, thinly sliced

  • 100 g/4 oz lean pork, thinly sliced

  • 60 ml/4 tbsp soy sauce

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 1 egg white

  • 45 ml/3 tsp groundnut (peanut) oil

  • 3 slices ginger root, chopped

  • 50 g/2 oz bamboo shoots, sliced

  • 225 g/8 oz mushrooms, sliced

  • 225 g/8 oz Chinese leaves, shredded

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 30 ml/2 tbsp water


Method:

  1. Mix together the chicken and pork. Mix the soy sauce, 5 ml/2 tsp of corn-flour and the egg white and stir into the chicken and pork. Leave to stand for 30 minutes.

  2. Heat half the oil and fry the chicken and pork until lightly browned then remove them from the pan.

  3. Heat the remaining oil and fry the ginger, bamboo shoots, mushrooms and Chinese leaves until well coated in oil. Add the stock and bring to the boil.

  4. Return the chicken mixture to the pan, cover and simmer for about 3 minutes until the meats are tender.

  5. Blend the remaining corn-flour to a paste with the water, stir into the sauce and simmer, stirring, until the sauce thickens. Serve at once.
