Chinese Chicken Recipes - Chicken Rissoles Recipe
Ingredients

225 g/8 oz chicken meat,
minced (ground)
-
3 water chestnuts, minced
-
1 spring onion (scallion),
chopped
-
1 slice ginger root, minced
-
2 egg whites
-
5 ml/2 tsp salt
-
5 ml/1 tsp freshly ground
pepper
-
120 ml/4 fl oz/1/2 cup
groundnut (peanut) oil
-
5 ml/1 tsp chopped ham
Method:
-
Mix together the chicken, chestnuts, half the spring
onion, the ginger, egg whites, salt and pepper.

Shape into small balls and press flat. Heat the oil
and fry the rissoles until golden brown, turning
once.
-
Serve sprinkled with the remaining spring
onion and the ham.
