Chinese Chicken Recipes - Chicken in Sesame Oil Recipe

Ingredients

  • 90ml/6 tbsp peanut oil

  • 60ml/4 tbsp sesame oil

  • 5 slices ginger root

  • 4 chicken pieces

  • 600ml/2 1/2 cups rice wine or dry sherry

  • 5ml/1 tsp sugar

  • salt and freshly ground pepper


Method:

  1. Heat the oils and fry the ginger and chicken until lightly browned.

  2. Add the wine or sherry and season with sugar, salt and pepper.

  3. Bring to the boil and simmer gently, uncovered, until the chicken is tender and the sauce has reduced. Serve in bowls.
