Chinese Chicken Recipes - Chicken with Soy Sauce Recipe

Ingredients

  • 350 g/12 oz chicken, diced

  • 2 spring onions (scallions), chopped

  • 3 slices ginger root, minced

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp water

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 60 ml/4 tsp thick soy sauce

  • 5 ml/1 tsp sugar


Method:

  1. Mix together the chicken, spring onions, ginger, corn-flour, wine or sherry and water and leave to stand for 30 minutes, stirring occasionally.

  2. Heat the oil and stir-fry the chicken for about 3 minutes until lightly browned.

  3. Add the soy sauce and sugar and stir-fry for about 1 minute until the chicken is cooked through and tender.
