Chinese Chicken Recipes - Chicken with Spinach Recipe

Ingredients

  • 100 g/4 oz chicken, minced

  • 15ml/1 tbsp ham fat, minced

  • 175 ml/6 f1 oz/3/4 cup chicken stock

  • 3 egg whites, lightly beaten

  • salt

  • 5 ml/1 tsp water

  • 450 g/1lb spinach, finely chopped

  • 5 ml/1 tsp corn-flour (cornstarch)

  • 45 ml/3 tbsp groundnut (peanut) oil


Method:

  1. Mix together the chicken, ham fat, 150 ml/2/3 cup of chicken stock, the egg whites, 5 ml/1 tsp of salt and the water.

  2. Mix the spinach with the remaining stock, a pinch of salt and the corn-flour mixed with a little water.

  3. Heat half the oil, add the spinach mixture to the pan and stir constantly over a low heat until heated through. Transfer to a warmed serving plate and keep warm.

  4. Heat the remaining oil and fry spoonfuls of the chicken mixture until set and white. Arrange on top of the spinach and serve at once.
