Chinese Chicken Recipes - Chicken in Tomato Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 2 cloves garlic, crushed

  • 450 g/1lb chicken, cubed

  • 300 ml/1 1/4 cups chicken stock

  • 120 ml/4 fl oz/1/2 cup tomato ketchup (catsup)

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 4 spring onions (scallions), sliced


Method:

  1. Heat the oil with the salt and garlic until the garlic is lightly golden. Add the chicken and stir-fry until lightly browned.

  2. Add most of the stock, bring to the boil, cover and simmer for about 15 minutes until the chicken is tender.

  3. Stir the remaining stock with the ketchup and corn-flour and stir it into the pan. Simmer, stirring, until the sauce thickens and clears.

  4. If the sauce is too thin, leave it simmering for a while until it has reduced. Add the spring onions and simmer for 2 minutes before serving.
