Chinese Chicken Recipes - Chicken and Tomatoes with Black Bean Sauce Recipe

Ingredients

  • 45ml/3 tbsp peanut oil

  • 1 clove garlic, crushed

  • 45ml/3 tbsp black bean sauce

  • 225g/8oz chicken, diced

  • 15ml/1 tbsp rice wine or dry sherry

  • 5ml/1 tbsp soy sauce

  • 90ml/6 tbsp chicken stock

  • 3 tomatoes, skinned and quartered

  • 10ml/2 tsp corn-flour

  • 45ml/3 tbsp water


Method:

  1. Heat the oil and fry the garlic for 3o seconds. Add the black bean sauce and fry for 30 seconds then add the chicken and stir until well coated in oil.

  2. Add the wine or sherry, sugar, soy sauce and stock, bring to the boil, cover and simmer for about 5 minutes until the chicken is cooked.

  3. Mix the corn-flour and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
