Chinese Chicken Recipes - Chicken with Tomatoes Recipe
Ingredients

225 g/8 oz chicken,
diced
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
15 ml/1 tbsp soy sauce
-
15 ml/1 tbsp rice wine
or dry sherry
-
45 ml/3 tbsp groundnut
(peanut) oil

1 onion, diced
-
60 ml/4 tbsp chicken
stock
-
5 ml/1 tsp salt
-
5 ml/1 tsp sugar
-
2 tomatoes, skinned and
diced
Method:

Mix the chicken with the corn-flour, soy sauce and
wine or sherry and leave to stand for 30 minutes.

Heat the oil and fry the chicken until lightly
colored. Add the onion and stir-fry until softened.

Add the stock, salt and sugar, bring to the boil and
stir gently over a low heat until the chicken is
cooked.

Add the tomatoes and stir until heated
through.
