Chinese Chicken Recipes - Chicken with Tomatoes Recipe

Ingredients

  • 225 g/8 oz chicken, diced

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, diced

  • 60 ml/4 tbsp chicken stock

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sugar

  • 2 tomatoes, skinned and diced


Method:

  1. Mix the chicken with the corn-flour, soy sauce and wine or sherry and leave to stand for 30 minutes.

  2. Heat the oil and fry the chicken until lightly colored. Add the onion and stir-fry until softened.

  3. Add the stock, salt and sugar, bring to the boil and stir gently over a low heat until the chicken is cooked.

  4. Add the tomatoes and stir until heated through.
