Chinese Chicken Recipes - Chicken with Walnuts Recipe

Ingredients

  • 100 g/4 oz/1 cup shelled walnuts, halved

  • oil for deep-frying

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 slices ginger root, minced

  • 225 g/8 oz chicken, diced

  • 100 g/4 oz bamboo shoots, sliced

  • 75 ml/5 tbsp chicken stock


Method:

  1. Prepare the walnuts, heat the oil and deep-fry the walnuts until golden brown then drain well.

  2. Heat the groundnut oil and fry the ginger for 30 seconds. Add the chicken and stir-fry until lightly browned.

  3. Add the remaining ingredients, bring to the boil and simmer, stirring, until the chicken is cooked.
