Chinese Chicken
Recipes - Chili Chicken Curry Recipe
Ingredients
120 ml/4 fl oz/1/2 cup
groundnut (peanut) oil
4 chicken pieces
1 onion, chopped
5 ml/1 tsp curry powder
5 ml/1 tsp chili sauce
15 ml/1 tbsp rice wine or
dry sherry
2.5 ml/1/2 tsp salt
600 ml/2 1/2 cups
chicken stock
15 ml/1 tbsp corn-flour
(cornstarch)
45 ml/3 tbsp water
5 ml/1 tsp sesame oil
Method:
Heat the oil and fry the chicken pieces until golden
brown on both sides then remove them from the pan.
Add the onion, curry powder and chili sauce and
stir-fry for 1 minute. Add the wine or sherry and
salt, stir well, then return the chicken to the pan
and stir again.
Add the stock, bring to the boil and
simmer gently for about 30 minutes until the chicken
is tender.
If the sauce has not reduced
sufficiently, blend the corn-flour and water to a
paste, stir a little into the sauce and simmer,
stirring, until the sauce thickens. Serve sprinkled
with sesame oil.
