ml/3 tbsp curry powder
1 onion, sliced
350 g/2 oz chicken, diced
150 ml/2/3 cup chicken stock
5
ml/1 tsp salt
10 ml/2 tsp corn-flour (cornstarch)
15 ml/1 tbsp water
Method:
Heat the curry powder and onion in a dry pan for 2
minutes, shaking the pan to coat the onion. Add the
chicken and stir until well coated in curry powder.
Add the stock and salt, bring to the boil, cover and
simmer for about 5 minutes until the chicken is
tender.
Mix the corn-flour and water to a paste, stir
into the pan and simmer, stirring, until the sauce
thickens.
