Chinese Chicken Recipes - Chinese Roast Turkey Recipe

Ingredients

  • 1 small turkey

  • 600ml/2 1/2 cups hot water

  • 10ml/2 tsp allspice

  • 500ml/2 cups soy sauce

  • 5ml/1 tsp sesame oil

  • 10ml/2 tsp salt

  • 45ml/3 tbsp butter


Method:

  1. Place the turkey in a pan and pour over the hot water. Add the remaining ingredients except the butter and leave to stand for 1 hour, turning several times.

  2. Remove the turkey from the liquid and brush with butter.

  3. Place in a roasting tin, cover loosely with kitchen foil and roast in a preheated oven at 160C/325F/gas mark 3 for about 4 hours, basting occasionally with the soy sauce liquid.

  4. Remove the foil and allow the skin to crisp for the last 30 minutes of cooking.
