Chinese Chicken Recipes - Cooked Chicken with Pineapple Recipe

Ingredients

  • 45ml/3 tsp peanut oil

  • 225g/8oz cooked chicken, diced

  • alt and freshly ground pepper

  • 2 stalks celery, diagonally sliced

  • 33 slices pineapple, cut into chunks

  • 120ml/1/2 cup chicken stock

  • 15ml/1 tbsp soy sauce

  • 10ml/2 tbsp corn-flour

  • 30ml/2 tbsp water


Method:

  1. Heat the oil and fry the chicken until lightly browned. Season with salt and pepper, add the celery and stir-fry for 2 minutes.

  2. Add the pineapple, stock and soy sauce and stir for a few minutes until heated thorough.

  3. Mix the corn-flour and water to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens.
