Chinese Chicken
Recipes - Crispy Fried Chicken Recipe
Ingredients

1 chicken
-
salt
-
30 ml/2 tbsp rice wine or
dry sherry
-
3 spring onions
(scallions), diced
-
1 slice ginger root
-
30 ml/2 tbsp soy sauce
-
30 ml/2 tbsp sugar
-
5 ml/1 tsp whole cloves
-
5 ml/1 tsp salt
-
5 ml/1 tsp peppercorns
-
150 ml/2/3 cup
chicken stock
-
oil for deep-frying

1 lettuce, shredded
-
4
tomatoes, sliced
-
1/2 cucumber, sliced
Method:
-
Rub the chicken with salt and leave to stand for 3
hours. Rinse and place in a bowl.

Add the wine or
sherry, ginger, soy sauce, sugar, cloves, salt,
pepper corns and stock and baste well.

Stand the
bowl in a steamer, cover and steam for about 2 1/4
hours until the chicken is thoroughly cooked. Drain.

Heat the oil until smoking, then add the chicken and
deep-fry until browned. Fry for a further 5 minutes
then remove from the oil and drain.

Cut into pieces
and arrange on a warmed serving plate. Garnish with
the lettuce, tomatoes and cucumber and serve with a
pepper and salt dip.
