Chinese Chicken Recipes - Crispy Fried Chicken Recipe

Ingredients

  • 1 chicken

  • salt

  • 30 ml/2 tbsp rice wine or dry sherry

  • 3 spring onions (scallions), diced

  • 1 slice ginger root

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp sugar

  • 5 ml/1 tsp whole cloves

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp peppercorns

  • 150 ml/2/3 cup chicken stock

  • oil for deep-frying

  • 1 lettuce, shredded

  • 4 tomatoes, sliced

  • 1/2 cucumber, sliced


Method:

  1. Rub the chicken with salt and leave to stand for 3 hours. Rinse and place in a bowl.

  2.  Add the wine or sherry, ginger, soy sauce, sugar, cloves, salt, pepper corns and stock and baste well.

  3. Stand the bowl in a steamer, cover and steam for about 2 1/4 hours until the chicken is thoroughly cooked. Drain.

  4. Heat the oil until smoking, then add the chicken and deep-fry until browned. Fry for a further 5 minutes then remove from the oil and drain.

  5. Cut into pieces and arrange on a warmed serving plate. Garnish with the lettuce, tomatoes and cucumber and serve with a pepper and salt dip.
