Recipes - Crispy Fried Spiced Chicken Recipe
Ingredients
450 g/1lb chicken meat, cut
into chunks
30 ml/2 tbsp soy sauce
30 ml/2 tbsp plum sauce
45 mll3 tbsp mango chutney
1 clove garlic, crushed
2.5 ml/1/2 tsp ground ginger
few drops of brandy
30 ml/2 tbsp corn-flour
(cornstarch)
2 eggs, beaten
100 gl4 oz/1 cup dried
breadcrumbs
30 ml/2 tbsp groundnut
(peanut) oil
6 spring onions
(scallions), chopped
1 red pepper, diced
1 green pepper, diced
30 ml/2 tbsp soy sauce
30 ml/2 tbsp honey
30 ml/2 tbsp wine vinegar
Method:
Place the chicken in a bowl. Mix the sauces,
chutney, garlic, ginger and brandy, pour over the
chicken, cover and leave to marinate for 2 hours.
Drain the chicken then dust it with corn-flour. Coat
in eggs then breadcrumbs. Heat the oil then fry the
chicken until golden brown. Remove from the pan.
Add
the vegetables and stir-fry for 4 minutes then
remove. Drain the oil from the pan then return the
chicken and vegetables to the pan with the
remaining ingredients.
Bring to the boil and heat
through before serving.
