Chinese Chicken Recipes - Crispy Fried Spiced Chicken Recipe

Ingredients

  • 450 g/1lb chicken meat, cut into chunks

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp plum sauce

  • 45 mll3 tbsp mango chutney

  • 1 clove garlic, crushed

  • 2.5 ml/1/2 tsp ground ginger

  • few drops of brandy

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 2 eggs, beaten

  • 100 gl4 oz/1 cup dried breadcrumbs

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 6 spring onions (scallions), chopped

  • 1 red pepper, diced

  • 1 green pepper, diced

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp honey

  • 30 ml/2 tbsp wine vinegar


Method:

  1. Place the chicken in a bowl. Mix the sauces, chutney, garlic, ginger and brandy, pour over the chicken, cover and leave to marinate for 2 hours.

  2. Drain the chicken then dust it with corn-flour. Coat in eggs then breadcrumbs. Heat the oil then fry the chicken until golden brown. Remove from the pan.

  3. Add the vegetables and stir-fry for 4 minutes then remove. Drain the oil from the pan then return the chicken and vegetables to the pan with the remaining ingredients.

  4. Bring to the boil and heat through before serving.
