Chinese Chicken Recipes - Curried Chicken with Potatoes Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 1 dove garlic, crushed

  • 750 g/1 1/2lb chicken, cubed

  • 225 g/8 oz potatoes, cubed

  • 4 onions, cut into wedges

  • 15 ml/1 tbsp curry powder

  • 450 ml/2 cups chicken stock

  • 225 g/8 oz mushrooms, sliced


Method:

  1. Heat the oil with the salt and garlic, add the chicken and fry until lightly browned. Add the potatoes, onions and curry powder and stir-fry for 2 minutes.

  2. Add the stock, bring to the boil, cover and simmer for about 20 minutes until the chicken is cooked, stirring occasionally.

  3. Add the mushrooms, remove the lid and simmer for a further 10 minutes until the liquid has reduced.
