Recipes - Curried Chicken with Potatoes Recipe
Ingredients
45 ml/3 tbsp groundnut
(peanut) oil
2.5 ml/1/2 tsp salt
1 dove garlic, crushed
750 g/1 1/2lb chicken, cubed
225 g/8 oz potatoes, cubed
4 onions, cut into wedges
15 ml/1 tbsp curry powder
450 ml/2 cups chicken
stock
225 g/8 oz mushrooms,
sliced
Method:
Heat the oil with the salt and garlic, add the
chicken and fry until lightly browned. Add the
potatoes, onions and curry powder and stir-fry for 2
minutes.
Add the stock, bring to the boil, cover
and simmer for about 20 minutes until the chicken is
cooked, stirring occasionally.
Add the mushrooms,
remove the lid and simmer for a further 10 minutes
until the liquid has reduced.
