Chinese Chicken Recipes - Deep-Fried Chicken with Curry Sauce Recipe

Ingredients

  • 1 egg, lightly beaten

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 2.5 ml/1/2 tsp salt

  • 225 g/8 oz chicken, cubed

  • oil for deep-frying

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 30 ml/2 tbsp curry powder

  • 60 ml/4 tbsp rice wine or dry sherry


Method:

  1. Beat the egg with the corn-flour, flour and salt to a thick batter. Pour over the chicken and stir well to coat.

  2. Heat the oil and deep-fry the chicken until golden brown and cooked through. Meanwhile, heat the oil and fry the curry powder for 1 minute.

  3. Stir in the wine or sherry and bring to the boil. Place the chicken on a warmed plate and pour over the curry sauce.
