Chinese Chicken
Recipes - Deep-Fried Chicken with Curry Sauce Recipe
Ingredients

1 egg, lightly beaten

30 ml/2 tbsp corn-flour
(cornstarch)

25 g/1 oz/1/4 cup plain (all-purpose)
flour
-
2.5 ml/1/2 tsp salt
-
225 g/8 oz chicken, cubed
-
oil for deep-frying
-
30 ml/2 tbsp groundnut
(peanut) oil

30 ml/2 tbsp curry powder
-
60 ml/4 tbsp rice wine or
dry sherry
Method:

Beat the egg with the corn-flour, flour and salt to a
thick batter. Pour over the chicken and stir well to
coat.

Heat the oil and deep-fry the chicken until
golden brown and cooked through. Meanwhile, heat the
oil and fry the curry powder for 1 minute.

Stir in
the wine or sherry and bring to the boil. Place the
chicken on a warmed plate and pour over the curry
sauce.
