Recipes - Deep Fried Chicken with Ginger Recipe
Ingredients
1 chicken, halved
4 slices ginger root,
crushed
30 ml/2 tbsp rice wine or
dry sherry
30 ml/2 tbsp soy sauce
5 ml/1 tsp sugar
oil for deep-frying
Method:
Place the chicken in a shallow bowl. Mix the ginger,
wine or sherry, soy sauce and sugar, pour over the
chicken and rub into the skin. Leave to marinate
for 1 hour.
Heat the oil and deep-fry the chicken,
one half at a time, until lightly colored. Remove
from the oil and leave to cool slightly while you
reheat the oil.
Return the chicken to the pan and
deep-fry until golden brown and cooked through.
Drain well before serving.
