Chinese Chicken Recipes - Deep Fried Chicken with Ginger Recipe

Ingredients

  • 1 chicken, halved

  • 4 slices ginger root, crushed

  • 30 ml/2 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • oil for deep-frying


Method:

  1. Place the chicken in a shallow bowl. Mix the ginger, wine or sherry, soy sauce and sugar, pour over the chicken and rub into the skin. Leave to marinate for 1 hour.

  2. Heat the oil and deep-fry the chicken, one half at a time, until lightly colored. Remove from the oil and leave to cool slightly while you reheat the oil.

  3. Return the chicken to the pan and deep-fry until golden brown and cooked through. Drain well before serving.
