Recipes - Deep-Fried Chicken Legs Recipe
Ingredients
2 large chicken legs, boned
2 spring onions (scallion)
1 slice ginger, beaten flat
120 ml/4 fl oz/1/2 cup soy
sauce
5 ml/1 tsp rice wine or dry
sherry
oil for deep-frying
5 ml/1 tsp sesame oil
freshly ground pepper
Method:
Spread out the chicken flesh and score it all over.
Beat 1 spring onion flat and chop the other. Mix the
flattened spring onion with the ginger, soy sauce
and wine or sherry.
Pour over the chicken and leave
to marinate for 30 minutes. Remove and drain. Place
on a plate on a steamer rack and steam for 20
minutes.
Heat the oil and deep-fry the chicken for about 5
minutes until golden brown. Remove from the pan,
drain well and slice thickly, then arrange the
slices on a warmed serving plate.
Heat the sesame
oil, add the chopped spring onion and pepper, pour
over the chicken and serve.
