Chinese Chicken Recipes - Deep-Fried Whole Chicken Recipe

Ingredients

  • 1 chicken

  • 10 ml/2 tsp salt

  • 15 ml/1 tbsp rice wine or dry sherry

  • 2 spring onions (scallions), halved

  • 3 slices ginger root, cut into strips

  • oil for deep-frying


Method:

  1. Pat the chicken dry and rub the skin with salt and wine or sherry. Place the spring onions and ginger inside the cavity.

  2. Hang the chicken to dry in a cool place for about 3 hours. Heat the oil and place the chicken in a frying basket.

  3. Lower gently into the oil and baste continuously inside and out until the chicken is lightly colored.

  4. Remove from the oil and leave to cool slightly while you reheat the oil. Fry again until golden brown. Drain well then chop into pieces.
